MINI RUSKS SPREAD WITH SOUR CREAM CHEESE AND FRIED APAKI

Mini rusks spread with sour cream cheese and fried apaki

Ingredients for a platter

18 mini whole grain barley rusks
250 gr. xinomyzithra
4 tablespoons of olive oil
1 tbsp of thyme
18 slices of apaki
2 tbsp of olive oil for apaki
1 wine glass of red wine for apaki

Stir the sour cream cheese with olive oil and thyme.
Coat the mixture on the mini whole grain barley rusks. In a pan, heat 2 tablespoons of olive oil and sauté the apaki until it gets golden brown. Add vinegar.
put a slice apaki on each mini rusk. Garnish with chopped arugula and chopped tomatoes.
