ARUGULA SALAD WITH RUSKS (WHOLE GRAIN MINI RUSKS WITH 4 CEREAL AND CAROB), MINT AND BOILED EGG

Arugula salad with rusks (whole grain mini rusks with 4 cereal and carob), mint and boiled egg

Ingredients for 4 people

12 Wholegrain Rusks with 4 cereals and carob
2 bunches of arugula cut into chunks
3 boiled eggs
6 cherry tomatoes cut in half
4 tsp capers
1 cup chopped mint
2 tablespoons of balsamic
8 tablespoons olive oil
some salt

Execution

Wash the arugula and cut it into chunks. Put it in a large salad bowl. Pour over the capers, mint and salt them. Mix well. Pour the rusks, both eggs and tomatoes cut in half and pour olive oil and balsamic. Serve.

Carob rusks are rich in glucans, natural sugars and antioxidants.
