Ingredients for 4 people
4 Barley Rusks PGI
4 fresh eggs
1 cup Olive oil for frying eggs
4 tablespoons tomato paste
4 tablespoons Graviera on grater
1 tsp oregano
Sprinkle the rusks with a little water. Pour 1 tablespoon of olive oil on each. Stir the paste with a little salt and oregano. Spread the rusks with the mixture of tomato paste. Fry the eggs in the remaining oil. Place 1 egg on each rusk. Put salt and pepper and sprinkle each rusk with a spoon fuli of grated graviera cheese.
