The Cretan Rusk

Rusks have high nutritional value. Depending on their raw materials, they offer us a plethora of nutrients. They have a high content of dietary fiber, contributing to the good function of the intestine. Barley flour contains B-complex vitamins, with folate and vitamin B6 being the most important, dietary fiber, antioxidants, silicon (which contributes to the regeneration and protection of our bones), chromium (its adequate intake is associated with better blood sugar control for diabetics), amino acids, magnesium, and phosphorus. Additionally, barley contains less gluten than wheat.
